No slow cooker, so what to do? I'd like to just put the Dutch oven on to bake. But at what temperature? Did how long? Any other details different?

I’d just brown the meat in your pot, then add the veggies and get those softened a bit, then just follow the recipe. Bring the liquids to the boil, cover and put in a 300 degree oven for 2-2 1/2 hours. Check that the meat is tender, and if not leave it in the oven, checking it every 30 minutes. It should be fine.

I'd follow Step 2 of the recipe, heating the oven to 325 Fahrenheit. Then I'd cook the joint covered tightly for 5 hours, based on the advice in this article: https://www.livestrong.com/article/469882-how-to-convert-crock-pot-cook-time-to-oven-cook-time/
