I personally would do a roasted shallot white wine sauce....Or a Huckleberry port reduction.

Aren't you lucky to have these to cook!
Most sauces for quail have some kind of fruit and/or sweetener.
Two to recommend are
• the classic French fig and Madeira sauce (from cailles en sarcophage)....recipes all over the place from new York times to you tube.
• red wine and dried cherry sauce from ricardocuisine.com (Ricardo is a respected and beloved Canadian cookbook author, blogger and TV teacher(.
