If I want to use homemade pasta sheets for this, how thick should they be and what adjustments should I make to the bake time/temperature? Thanks!

You will want the pasta sheets about as thin as you can get them. That's easiest done if you are using a machine to roll out the pasta. Cooking time for a lasagna with fresh pasta is usually about 30 minutes, baked covered with foil. You don't want to cook the pasta ahead of assembly, just layer them in as you would with the precooked dried sort.
