I think you could omit the egg in the filling, and/or top off with a little more arrowroot powder. It's one egg, and this isn't a custard that depends on eggs to set. With the forward cranberry flavor, the egg isn't adding much in the way of flavor either, and if you use something like a coconut oil crust, you won't miss any richness the yolk would add. Come to think of it, I can't remember adding egg to any fruit pie fillings, except this one. I've made this pie as written so I can't be 100% sure, but I think the filling would have held together just fine without the egg. But if you did want an egg replacement with binding properties in mind, I think a flax egg or unwhipped aquafaba would work here.
I don't know of a replacement for the gloss the egg wash adds. But I do know that is definitely not necessary, having forgotten an egg wash on more than on occasion. It does look nice though. Curious to see if anyone else has any ideas!
Thank you Stephanie! I am making a chickpea dish so I will have some aquafaba around. I also have chia seeds and of course am fine with adding nothing! As long as it's not really necessary in holding the filling together (a friend who has made this pie said that as far as fruit pies go it's not on thewatery side) then maybe i'll just see how it's looking once i assemble it. I was going to use crisco for crust as that's what i've used in the past for non-vegan pies but i do love coconut oil also.
