Are the lime leaves essential to this recipe, or can I omit them?

Lime leaves are a big component of the fragrance and flavor of the curry. That said, if you don't have it, try lime zest. The curry will be fine without the lime leaves, but it won't smell or taste quite the same. Lime leaves, especially kaffir, has this incredible indescribable fragrance that elevates the curry. If your area has Asian/Indian grocery shops, check out the produce or freezer aisle for the leaves. Again, the curry should be just fine without the leaves.
