Dry brining a turkey, how long is too long?

Hi, I have a 15# turkey and plan to dry brine it under plastic, then let it air dry in the fridge for at least 24 hours before Thanksgiving. What’s the earliest you recommend starting the dry brine? Thank you!

Hi Joey! For a 15lb Turkey, we recommend starting the brining about two days in advance. No need to brine any earlier than that! Here are a few more tips and tricks: https://food52.com/blog/23336-roast-turkey-thanksgiving-dry-wet-brine-salt
