Yes, I roll chocolate chip cookie dough into logs, cut each log in half, freeze the logs. I defrost and slice when I want just a few cookies.

With only 2 of us at home, I make coconut oatmeal cookies that get formed into a roll wrapped and refrigerated. I take this a step further and freeze the rolls, then remove from freezer and vacuum seal each individually. I can take one roll from freezer, cut apart and bake, making a sheetful of cookies at one time instead of 5 dozen.

Yes, definitely! I like to scoop the dough onto a sheet pan, stick that in the freezer until the dough blobs are firm/frozen, then transfer those to a container or bag, and keep them in the freezer for weeks (or even months). Just bake directly from frozen, adding a couple minutes to the bake time.
