Gramma Battalli hazelnut chocolate biscotti! This is a good recipe but should I let the logs cool fir at least 29 min. I cut them and Oozing inside?

Unfortunately you didn't share the recipe, but when baked the first time, the logs should not in any way be oozing when done. Actually, they should be rather firm, but not completely dry, so they won't flatten as they are cut before baking a second time. Most biscotti recipes call for cooling only about 10 minutes before cutting and baking that second time.
