Hi Jusika! You could increase the ratio of whole-wheat flour—say, to 2/3 cup all-purpose and 2/3 cup whole-wheat—but I wouldn't recommend adjusting to all whole-wheat (the crust might become too difficult to work with and compromise the rest of the quiche).

thank you so much for your response. I finally got around to making this and it came out beautifully! I used exactly the proportions you recommended for the crust with 2/3 + AP + 2/3 WW. the crust was so so good! thank you!
