Cheese Options for this recipe other than Cheddar or mozzarella

I have access to French and Italian cheeses. Can you recommend an alternative to Cheddar? I can get buffalo mozzarella but nothing like the solid mozzarella you have in the states.

Hi! If you want to swap out the cheddar, I'd recommend another cheese that melts well—say, gruyère, taleggio, or provolone. Hope that helps!
