Can I use cinnamon & raisens instead of the savory addins and make it a breakfast bread? Would I leave in or out the ACV in that case?

Yes, you could. Keep in mind that the raisins will absorb some moisture, whereas the brine from the olives will add moisture, so I'd soak the raisins in water for 5-10 minutes before adding them. I would probably leave out the vinegar. It doesn't seem to be serving any functional purpose and I doubt that it would make the sweet version any better.

I'd also add more honey, to make the bread sweeter. Note that more sugar/honey will cause more browning, so check the loaf after about 30 minutes (and every 20 minutes after that) and cover lightly with foil if necessary to keep the loaf from getting too dark.
