Hi, this looks amazing, if I were to double the recipe I'm thinking it would be fine, has anyone done this or do you have any advice? Thanks much!

If you plan to serve it at one big dinner, or use within a few days (after keeping it in the fridge), simply double the amounts for one recipe.
If you plan to freeze, omit the potato and cream. Freeze in usable portions. Defrost. Reheat, adding cooked potato during that process. Then, add cream at the end, warm a minute or two and serve.
