Roughly how many cloves are in three heads of garlic? I have confit garlic in my fridge, but don’t know how many to use.

Clarify: that's 10-12 cloves PER HEAD, so about 30 for 3 heads.

Roughly 10-12 (I forget exactly).A fresh single clove is about 3-5 grams weight, or about 1 tsp.You might want to start with less than a tsp to approximate one clove lest you get too strong a taste.You can always add more later, or when you make the recipe again.
