Locked down in Italy and can only get 00 flour...can I substitute it for AP or bread flour? What adjustments should I make?

Hi Minilion! The protein content of AP flour is around 10-12%, while 00 is 8-12%. You're more than fine subbing 1 for 1, though there may be subtle differences in chewiness/flavor.
