The Joy of My Pickling by Linda Ziedrich has a freezer slaw I've made and enjoyed. You can pack it in several small plastic bags and thus have small servings when wanted. It is not mayonnaise-based.

Don't recommend planning to do it.
If you made too much and it has vinaigrette dressing, ok for a month or two in freezer.
If you made too much and it has mayo dressing, don't freeze (poor results).
Store in fridge up to a week and/or cook to use as a hot side dish.
If you have to much cabbage on hand, make another dish with it or freeze raw.

I've never tried this but here is a recipe for "Freezer Slaw":

I saw that recipe too and was curious so I read the reviews. Some of the reviews didn't freeze it, but loved it fresh. So I discarded those reviews. Some of the others still say it was limp out of the freezer, so I wonder what's up...if someone makes it I'd love to hear.

I've never done it, but I'm guessing that freezing cole slaw would result in a limp, lifeless consistency upon thawing. There's so much water in both cabbage and carrots, that I can't imagine the crunchy texture of fresh cole slaw would survive freezing. Sorry!
