This seens like it would also be great as a garnish on something. Any ideas?

Sorry answered the wrong questions! Yes -- could be a garnish for panna cotta, a cake (as panfusine suggests), and ice cream.

I've tried baking cupcakes with slivered candied winter melon squash (a traditional sweet called Petha, from Agra, India), works very well!
