Can I use heavy cream/whipping cream in Jacques Pepin's Easy Cheese Soufflé recipe?

I only have skim milk (breakfast) and some 35% heavy cream/whipping cream in the fridge. Can I use the 35% cream in Jacques Pepin's Easy Cheese Soufflé? Recipe: https://food52.com/recipes...

That will be too rich, I would think. Instead, I would mix the skim milk with the 35% cream at ratio of 3 parts milk to 1 part cream . That technically will be a bit richer than whole milk (the standard conversion is 1.5 tablespoons cream + 14.5 tablespoons skim milk), but that substitute will make Pepin's Easy Cheese Souffle absolutely delicious. ;o)
