Milliard citric acid is food grade citric acid. I have used citric acid in canning vegetables that are low-acid, like certain types of tomatoes, in lieu of lemon juice which can vary in acidity. It is used as a preservative in foods like jams and jellies, and to keep canned fruits and vegetables from turning brown.

Citric acid is also used to impart sourness/tartness without having adjust the liquid ingredients.
