Sorry it dropped the rest of my question which is.. How do you keep from overcooking shrimp when it is cooked and then left in until a sauce boils or something like that.
Remove the cooked shrimp to a bowl and set aside. Cook the rest of the ingredients until they are done, take the pan off the heat, then add back the shrimp. Overcooked shrimp is travesty best avoided when you can :)
