Instant Yeast vs Active Dry Yeast

Can I use instant yeast instead of active dry and skip step one? Add the instant yeast after adding half of the flour and missing well, then add the rest of the flour?

You can, but to use instant yeast in place of active dry, incorporate directly into the dry ingredients (I usually whisk it to distribute the yeast into the flour).
