I have not specifically tried Pam's (I always use King Arthur Measure for Measure, because it's conveniently sourced here), but I have read that many people swear by Pam's.
I would not hesitate to use it in these cookies. Nearly all cookies are quite forgiving when you substitute a GF blend for all-purpose flour. If you try it, please let us know how the cookies turn out! ;o)
