can i make it the same day im eating it? or does it need to marinate?

I don't see why not - especially as all the elements are often eaten raw or as-is. Just be ready for the flavors to be less developed on Day 1 than you would expect from a pickled or marinated vegetable.

Thank you Nancy! I made it last night and served it today with grilled flank steak and it was delicious!!! Looking forward to eating it again and again for the next month!!
