what can I Substitute tapioca starch for noodles with?

A lot of Southeast Asian noodles use a Tapioca/Rice flour combo. Or all Rice flour but I don't know how that will change the liquid content of the recipe. I'd look for a noodle recipe with another type of flour content and go with that
