I haven’t boiled a fresh vegetable in many, many years. Mostly because, as Wendy said, the nutrients stay in the vegetable and don’t leach out into the water.

Carol, Yes you can fully cook, even overcook vegetables by steaming. The bonus is steamed vegetables are not watery and the nutrients stay in the vegetables and do not get discarded in the water.
