What kind and how much noodles?
Looking forward to making this vegan ramen in currently cool San Francisco for a yummy satisfying treat.

Thank you for pointing that out, I use either dry ramen noodles or udon noodles, about 100g per person. I recommend the Hakubaku brand, or the fresh ramen noodles from Nona Lim is great too.
