Could this recipe be missing needed sugar in the base?

I am surprised at how low sugar this recipe is. How is the texture? Does anyone recommend adding sugar or alcohol to help?

Looks like it is using coconut sugar in the base. Though 1/4 cup does not sound like it would be enough to keep the "ice cream" from freezing hard.
