Peel mandolin sliced apples for galette?

I've seen some very pretty galettes that left the peel on the apple and cut with a mandolin. I've never tried this but am thinking of it for this galette. Has anyone tried this? Does the peel get on the way of the final texture?

I've made apple galettes both with and without the peels. Using the peels won't affect the baking. It will affect the texture, as you can imagine. I wouldn't say that leaving the peels on get in the way - they just make the final texture a little different. This is just a matter of personal preference.
