Is there a suggestion for a simple roasted Chicken recipe that would pair well with the mole?

I find most chicken recipes to end up to greasy. Thanks

For a simple roast chicken, no added fat, use recioe by Chef Thomas Keller, at epicurious or Bon Apettit sites.
For recipes that draw on Mexican traditions, see chicken mole recipes by Chef Rick Bayless or cookbook author Diana Kennedy.
