Pecan Pie - what kind of nuts should I buy? Do I want salted or unsalted? Roasted or raw? Most recipes don't seem to specify!

Nuts for baking should be raw and unsalted. Nuts for eating out of hand, of course- are roasted and salted. Otherwise, the nuts would be likely to burn or dry out, and the extra salt and fat used in roasting could mess up the rest of the recipe.

I think most pie recipes call for raw, unsalted pecans. Hope this helps!
