Other kinds of cheese to complement chickpeas?

This dish looks scrumptious! Other than a young cheddar, what other cheeses do you think would complement chickpeas? Unsure if a younger Alpine cheese would work, like Gruyère, Compté, or Italian Fontina. TIA!

Agree. Probably any young, rich or easily melting cheese that you like.
I would avoid old, mouldy or very costly cheeses...they're better appreciated eaten at room temperature.

Hi, thanks! I bet any melty cheese (like any of the ones you mentioned—yum) would work great here.
