As far as I know once the custard has cooled, you can put it in the fridge and then do the topping just before serving. If you brulee it and then put it in the fridge the sugar liquifies.

Not sure the rest of your question Diane! But, you can make the pie earlier, let it cool and then sprinkle the sugar in an even layer to torch before your serve.
