Just wondering...Does this service purpose?

Please tell me what does blanching the oranges do? It seems like a pointless thing.

Hi Miss Karen,

Great question!
Blanching the orange peels will remove any bitterness that they may impart to the duck during baking.

Thank you for responding so quickly! I'm happy there is a madness behind the method. This sauce is killer!!! Sadly, I ended up braising it, because my new oven refused to get hot. So frustrating!!! No crispy skin- but quite delicious none the less.
