Directions to saute or pressure cook.

If I am skipping the pancetta, but still will saute the shallots, do I saute for approx 15 min and add the milk cream broth pecorino and pasta. Then do I turn on the Pressure cooker mode? It was a bit unclear in the first line or two of the directions. Why the 15 min timer?

The 15 minute time set is the suggested time setting, so you will have enough time to sauté pancetta and shallots before the pot shuts itself off. If you don't need that much time, then you hit the cancel button. You will hit the cancel button shortly after you add in the milk, cream, etc. It would be necessary to do that to swap over to the pressure cook settings, anyway.
