Nowhere do I see anything about peeling the skin off the squash.

When do I do that?

Hi Michelle -- I had the info on peeling in the ingredient line where I specify 2 to 3 pounds of winter squash, but I can see how it could be overlooked there! I moved the info to Step 1! Essentially -- peel if using butternut; feel free to leave the peel on if using delicata! Hope you enjoy the dish!
