If you go to the original blog, the recipe calls for 570-600 grams of pork belly. The precise weight is not that critical, since pork bellies do vary. In fact, you could easily go slightly under that, say 550 grams, or even slightly over, perhaps as much as 700 grams, without major problems. For many years, even the idea of eating such a -gasp- fatty cut of meat was nearly unthinkable. So I'm not so surprised that this recipe, which dates back several years, has not had a great deal of comment on that slight typo.
