Can this recipe be made with boneless, skinless chicken thighs?

Would anything need to change in the directions, other than cook time?

Correct, the cook time in step 3 will take a bit less, as will the cook time in the oven! You may find you need a bit more oil in the pan as well to compensate for the lack of rendered fat from the chicken :)
