Usually white vinegar means plain, grain-based vinegar. It will have a stronger taste. White wine vinegar would be more refined, less pungent but I imagine you could use either.

Thank you for the reply! Unfortunately, this type of vinegar (distilled white vinegar) isn’t readily available in Japan. Plenty of rice vinegar but I assume that would not work for this recipe. I think I’ll give white wine vinegar a try as the substitute for regular white vinegar.

I agree, rice vinegar probably won't have the right flavor. Wine vinegar would be a better choice.
