Favorite white wine vinegars?

I'd like to make some vinegars this summer from the herbs in my garden. Do you have a favorite white wine vinegar? My local supermarkets have a very limited selection.

I've heard that Four Monks wine vinegars, which come in gallon jugs at stores like Smart & Final and Cash & Carry for a reasonable price, are great for pickling, so I;m sure they'd be good for infusing as well. If you find that they are a bit sharp, just add a pinch of sugar to take the edge off - no shame in that. ;o)
