Can I sub anything for the cornstarch?

These noodles sound amazing but I'm allergic to corn. Do you have any recommendations for subbing out the cornstarch? I'm guessing arrowroot would be too gummy, I was almost thinking of subbing with cassava flour or rice flour? What do you think?

Maybe try potato starch, if you can tolerate it.

It has many of the same qualities as cornstarch.
Look for it in grocery stores in either the baking and/or kosher sections.
