How should I adjust slow-roasting time/temperature because my oven dislikes me?

Some of the buttons on my oven don't work, particularly the button that decreases the temperature. It doesn't go below 350F and I can't adjust while baking/roasting unless it's an increase in temp.

If I wanted to slow roast a meat, specifically pork, that's going to cook for about 3-3 1/2 hours, how do I adjust the time to ensure that my pork isn't overcooked at 350F? Any tips and tricks for meats/baked goods/etc? Or meringues even? I don't even think that's a possibility but if anyone has an tricks, it'd be greatly appreciated!

Can't help you in the temperamental stove, but yes there are other ways to cook the meat slowly and safely.
Most meats can be cooked slowly on the stovetop. See livestrong site for directions.
Or, if you have one, use an appliance like a slow cooker.
