My really like this one from Bon Appetite: https://www.bonappetit.com/recipe/banana-bread I swap out half the AP flour for KA White Whole Wheat flour, we prefer it without the chocolate so I add a bit more walnuts and I add some raw sugar to the top for some added crunchy sweetness. I also make it in 3 mini loaf pans (mine are 5’ x 3-1/4”) so I can freeze 2 loaves as there are only 2 of us. Another hint is you can so easily freeze overripe bananas... I cut into 1 inch pieces and individually freeze on a parchment-line baking sheet so I can weigh out exactly what I need.

Made this a lot during COVID shutdown. It uses 2 cups of mashed bananas. So if you have lots of bananas in the freezer, this is the recipe to use them all up.
