Yes, you can totally save it! I would just add more water or some stock and let it cook longer. My view on jambalaya is that in some cases, it's like risotto. If your rice isn't right, then more liquid and cooking it a little bit longer is the thing to do. If you are concerned with the stove, put it in the oven, then check on it. I would say around 375 degrees, covered for an additional 10 to 20 minutes, and see how the rice is then.
