batter in advance of cooking? would I ruin the pancakes
i've made these pancakes before and omg! what a hit! can I made the batter in advance (2 days)?? just trying to jumpstart a busy Easter Sunday breakfast:)

Also separately, mix the dries and store them in a jar or canister at room temperature.
Then all you have to do on the day is mix the two very briefly and start cooking the pancakes or use them in a waffle iron.
BTW, mixing things like pancake batters or quick breads (with chemical raising agents like b powder and/or b soda) will give you deflated baked goods as the chemicals start to work immediately they are in contact with liquid. And would probably be exhausted 2-3 days later.
