Tart pan size conversion? From one large tart to several small tarts.

I’m making Lazy Mary’s Improved Lemon Tart. It calls for a 9” tart pan. I want to make several 4” tarts. Is there an easy way to figure out how many 4” tarts I can make from a recipe for a 9” tart?

There really isn't a simple formula - it's more complicated than simply putting cake batter into a different size pan or pans, because you have the crust forming the perimeter of each tart, which simply doesn't substitute on a volume basis as a filling or batter alone would.

That said, I would estimate that you'll get 4 smaller tarts. The filling layer may be a little thicker or it may be thinner than the full tart - as the crust could be.

Remember to greatly reduce the baking time, watching carefully lest the tartlets burn!
