What’s a difference between pizza flour and all-purpose flour? Thanks.

Pizza flour is ground more finely and has more gluten, but all-purpose will make a fine pizza crust. I like to do half and half.

I also like to do a combination, usually 1/2 00 flour, 1/4 Whole Wheat bread flour, and 1/3 AP.
