Either would work. I'd use currants - about 1/4 cup - and would stir them in at the end.

I can’t see why not. I’d probably plump a tablespoon or so of raisins in some warm water or orange juice and then use the raisins in place of the shallots and caraway in the recipe for a different flavor profile.
