Would Neufchâtel work in place of the butter??

Another way to reduce fat in the recipe is to use cottage cheese instead of ricotta.
I think the butter or some fat is necessary to emulsify the sauce. Maybe start with 1 or 2 tbsp butter, blend, taste .if ok, stop there. If not, add 3rd tbsp, blend, taste.
So using these two approaches, you've probably cut the fat in the originsl recipe by about half.

You're trying to reduce the fat, right? I honestly don't know, but it seems like it could be worth a try. Maybe cut the recipe in half or 1/4 and try it on a small batch first?
