Yes, the strawberry milk portion can be made ahead of time in this strawberry oatmeal recipe. I'd prepare it no more than 12 or 15 hours in advance, as strawberries tend to break down rather quickly once cut.

And to answer your second question, they shouldn't curdle the milk. I put fresh strawberries into overnight oats with milk and it works great! The flavored milk is simply wonderful.

Finally, I see that they add the vanilla before cooking. I wouldn't do that. I'd add it toward the very end of the cooking time, to get the most vanilla flavor possible. (Heat tends to diminish it.)
