Just my two cents. You could do steps 1-4 in the processor, and that would help cut in the fat, mince/chop the cheddar, mix all.
However, once you add the buttermilk mix very little - just until the dough comes together, then parcel out/scoop out onto baking sheet.
Or, mix in processor through step 4. Turn out into a bowl, add buttermilk, mix very lightly, scoop out, bake.
Why not mix more?
Because once buttermilk and baking soda mix, they make bubbles of carbon dioxide, which help aerate the biscuits. Overmixing, either by machine or by hand, destroys some or most of those bubbles and gives heavy or heavier biscuits.

The vigorous action of the food processor could also cause the formation of more gluten than you'd get otherwise, resulting in a tough biscuit. ;o)

So, do you recommend against using the processor at all?

Good question. You could use the food processor, pulsing a few times, to mix the dry ingredients, and then pulse 15 - 20 times to cut in the butter.

I'd turn it out into a bowl at that point, because I don't think the cheese would do that well being processed - it would be blended too much, preventing the little bursts of cheese flavor you'd get by stirring it in. I'd stir in the cheese and jalapeno; stir in the buttermilk; and then scoop and bake as directed. ;o)

Thanks.. wasn't going to do the jalapeño & cheddar in processor, was going to stir in afterwards. And of course would only be pulsing to mix flour and cut in shortening.
