Is there something other than resting that would of make the dough easier to roll out?

Have made this recipe before with no problems but today my dough refuses to roll out and keeps shrinking back on itself, no amount of resting in the fridge seems to do any good :-/

I would try resting it at room temperature for 10-15 minutes. The problem of course is avoiding over-handling the dough, but I’d let it warm a bit, roll as much as you can and proceed, because if you keep trying it’s for sure going to get tough.
